Feed me Fridays: Turkey Teriyaki with Brown Rice
Now this isn’t the prettiest meal in the pantry, so I took a picture of it with a Tootsie Roll. That way, it wouldn’t look like a blob of brown sauce with rice mixture only. Now, it’s a brown blob mixture with an enticing dessert on the side. Ooooo, can’t wait to try it now, can you??? What I can tell you is it tastes SO GOOD. This is a staple in our house. (As is the Tootsie Roll.) This is super easy to make and my kids love it.
Turkey Teriyaki with Brown Rice
Ingredients
6 tbs of teriyaki sauce (I use Soy Vay Very Very Teriyaki Sauce from Trader Joe’s)
1 tsp crushed red pepper
1 lb of ground turkey breast
1/2 cup of mayonnaise
2 tbs of lemon juice
2 garlic cloves, minced
1 1/2 to 2 cups of brown rice
slices of cucumbers
In larger bowl, combine just 4 tbs of teriyaki sauce and crushed red pepper. Add turkey and coat. Cover, and refrigerate for 30 minutes.
In smaller bowl, combine mayonnaise, remaining 2 tbs of teriyaki sauce, lemon juice, and minced garlic. Set aside.
Cook 2 cups of rice according to directions. Set aside.
In a large pan, cook turkey on medium high. Once cooked through. Drain. Add sauce mixture. Stir thoroughly.
Serve over rice. (I mix my rice and turkey mixture together and serve.) Add cucumbers as side garnish.
