Feed me Fridays: mel’s caramel brownies
Ok, people. This is big for me. Sharing my go-to dessert. The one that people request over and over and over again. The one that new mothers want when I bring them dinner. The one that I have been making with my mother since I was in middle school.
Now it’s in your hands. Please be gentle.
Mel’s Caramel Brownies
- 1 (14 ounce) package individually wrapped KRAFT caramels, unwrapped
- 1/3 cup evaporated milk
- 1 (18.25 ounce) package german chocolate cake mix
- 3/4 cup butter, melted
- 1/3 cup evaporated milk
- 3/4 cup to 1 cup of chopped pecans
- 1/2 bag of milk chocolate chocolate chips
Before you begin doing ANYTHING, unwrap every caramel in the bag. Do it in front of the tv, or have your 4 yr old do it. Oh, and Grease a 9×13 inch brownie pan/casserole dish.
- Preheat oven to 350 degrees F (175 degrees C). In a heavy saucepan, combine caramels and 1/3 cup of evaporated milk. Cook over low heat, stirring constantly until smooth; set aside. (I nuke mine in the microwave for 2-3 minutes, but do what you got to do.)
- In a large bowl, stir together the cake mix, melted butter, pecans and 1/3 cup of evaporated milk until dough holds together. Press half of the dough into the prepared pan, reserving the rest.
- Bake for 6 minutes in the preheated oven. Remove from the oven and sprinkle the chocolate chips over the crust, pour the caramel mixture evenly over the chips. Crumble the remaining dough over the caramel layer and return to the oven.
- Bake for an additional 18 to 20 minutes in the preheated oven.(I prefer 18 minutes, but I LOVE gooey brownies.)
Now, I would recommend, if you have to take these anywhere, a bake sale, a friend’s house, OUT of the house, make these the night before. They are WAY too hard to cut and box and serve the day of, due to all the gooey-ness. Now, if you are just going to grab a spoon, start at the corner and dig your way out?, then make them any time you like.
If you are REALLY bold, you can serve a small scoop of ice cream on the side, but believe me, these guys are PLENTY on their own, but the addition does look nice, no?
Now……..once you have made these, you HAVE to come back and report your success.

I’ve made this same recipe since I was in middle school as well.
I recently made it for a potluck my husband’s work had and he said his co-workers cleared out all of these and ignored the 2 other plates of brownies brought in my others.
Awesome!
When searching for the instructions (so I didn’t have to type them all out myself, cause who has time for that?) I noticed there are a few varieties to this recipe. I do use a different cake mix, different chips and altered cooking times than the recipe I found. Is yours exact to this or does it vary as well?

They look delicious!! I can’t wait to try them. I think the ice cream would be a good balance. So they are easier to cut the next day? Are they good warm? Thanks for sharing!
When in doubt, eat them WARM. I heat mine in the microwave for under 10 seconds for ideal temp. Yes, cutting after they have set is way easier.

How dare I forget the damn pecans. They are added in with the cake mix, butter and evap. milk. I updated recipe now. Someone is paying attention to details. Good girl.

My recipe is the same as the one you’ve posted, with the exception that mine doesn’t call for pecans. I might consider that now, since I love pecans. My dad is allergic to nuts so I grew up in a household where we didn’t use them much!
Oh, and mine says to use 2/3 of the dough for the initial layer, but I usually just do half like the way you’ve posted it because if you don’t do half then the layer on top isn’t enough to truly contain the caramel.

This recipe looks almost good enough for me to give up the no dairy diet and quit the breastfeeding. Come to think of it, it will be even better in six months as a reward and at that point no one can fault me for eating an entire pan all by myself.

Ok so I finally got around to making these for my sister’s birthday this weekend. Holy crap. I may never make any other brownies again. Although I may play with different flavored chips, I will always remember the caramel and pecans. Thank you so much for this.
